Hobo Casserole Rustic Ground Beef and Potato Bake

A comforting and delicious Hobo Casserole made with ground beef and potatoes.

Ingredients

  • 1 pound ground beef
  • 4 large potatoes
  • 1 cup diced onion
  • 2 cups mixed vegetables
  • 1 can cream of mushroom soup
  • 1 cup shredded cheese
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef and onion until the beef is no longer pink.
  3. In a large bowl, combine the cooked beef mixture, diced potatoes, mixed vegetables, cream of mushroom soup, garlic powder, salt, and black pepper.
  4. Transfer the mixture to a greased baking dish and spread it evenly.
  5. Cover with aluminum foil and bake for 1 hour.
  6. Remove the foil, add the shredded cheese on top, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.

Notes

  • For a spicier dish, add diced jalapeños or hot sauce.
  • Feel free to substitute the vegetables with your favorites.
