High Protein Broccoli Cheddar Soup

A deliciously rich and nutritious soup packed with protein, featuring broccoli, cheddar cheese, and turkey bacon.

Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup milk
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, add olive oil and sauté onion and garlic until translucent.
  3. Add broccoli and cook for a few minutes.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Stir in milk and cheese until melted.
  6. Top with chopped turkey bacon before serving.
