Hearty Lasagna Soup with Bow Tie Pasta

A deliciously comforting soup that combines all the flavors of a traditional lasagna with the fun twist of bow tie pasta.

  • 1 pound ground beef
  • 1 onion chopped
  • 3 cloves garlic minced
  • 3 cups beef broth
  • 1 can diced tomatoes
  • 2 cups bow tie pasta
  • 1 teaspoon Italian seasoning
  • 1 can tomato sauce
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, brown the ground beef with the chopped onion and minced garlic over medium heat.
  2. Drain excess fat and stir in the diced tomatoes, beef broth, and tomato sauce. Bring to a boil.
  3. Add the bow tie pasta and Italian seasoning; reduce heat and simmer until pasta is tender.
  4. Stir in the ricotta cheese and half of the mozzarella cheese. Cook until heated through.
  5. Serve hot, garnished with remaining mozzarella and Parmesan cheese.

Notes

  • For added flavor, consider using fresh herbs in place of dried ones.
  • This soup can be made ahead and freezes well.
