  • 1 pound beef chuck, cut into small cubes
  • 4 cups beef broth
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 cup potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in tomato paste and cook for another minute.
  4. Pour in the beef broth and bring to a boil.
  5. Add in the mixed vegetables, potatoes, thyme, and bay leaf.
  6. Reduce heat and simmer for about 1.5 hours, or until the beef is tender.
  7. Season with salt and pepper before serving.

Notes

  • For a richer flavor, you can add red wine.
