- 4 large potatoes, diced
- 1 cup shredded cheddar cheese
- 1 cup turkey bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt to taste
- Pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, sauté onion and garlic until translucent.
- Add the diced potatoes and chicken broth, bring to a boil, then reduce heat and simmer until potatoes are tender.
- Use a blender to puree the soup to your desired consistency.
- Stir in the heavy cream, cheddar cheese, thyme, and parsley. Heat through.
- Serve hot, garnished with crispy turkey bacon.
Notes
- For extra creaminess, blend part of the soup and leave some chunks.
