Hearty Cheddar Garlic Herb Potato Soup Recipe

A deliciously thick and creamy potato soup with the flavors of cheddar, garlic, and herbs, complemented by turkey bacon.

Ingredients

  • 4 large potatoes, diced
  • 1 cup shredded cheddar cheese
  • 1 cup turkey bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Add the diced potatoes and chicken broth, bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Use a blender to puree the soup to your desired consistency.
  5. Stir in the heavy cream, cheddar cheese, thyme, and parsley. Heat through.
  6. Serve hot, garnished with crispy turkey bacon.

Notes

  • For extra creaminess, blend part of the soup and leave some chunks.
  • Feel free to add more herbs for enhanced flavor.
