Ingredients

  • 8 ounces pasta of your choice
  • 2 cups corn, fresh or frozen
  • 4 slices turkey bacon, cooked and crumbled
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large bowl, combine the cooked pasta, corn, turkey bacon, bell pepper, avocado, red onion, cilantro, and feta cheese.
  3. In a separate bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss until well combined.
  5. Chill in the refrigerator for at least 30 minutes before serving.
