  • 1 cup rolled oats
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, almond milk, honey (or maple syrup), baking powder, baking soda, cinnamon, and salt. Mix until combined.
  4. If using, fold in the chopped walnuts.
  5. Pour the mixture evenly into the muffin tin.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool for a few minutes before enjoying.
