  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the bananas and mix in the melted butter.
  3. Add the sugar, vanilla extract, and crushed pineapple to the banana mixture; combine well.
  4. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually incorporate the dry ingredients into the banana mixture.
  6. Fold in the shredded coconut.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
