  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 tablespoons green food coloring
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, mix the vegetable oil, buttermilk, eggs, vanilla extract, and green food coloring.
  4. Combine the wet and dry ingredients and mix until smooth.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. For the cheesecake layer, beat the cream cheese and powdered sugar together until smooth, then add the vanilla extract.
  9. In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
  10. Once the cakes are cool, place one layer on a serving plate, spread the cheesecake mixture on top, and then place the second layer on top.

Notes

  • Store the cake in an airtight container in the refrigerator.
  • For a richer flavor, you can add a splash of almond extract.
