  • 2 cups shredded cooked chicken
  • 1 cup green enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1/2 cup diced onions
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat, add onions and sauté until translucent.
  3. Add shredded chicken, green enchilada sauce, cumin, garlic powder, and salt, stir until heated through.
  4. In a baking dish, spread a small amount of enchilada sauce on the bottom.
  5. Fill each tortilla with the chicken mixture, roll them up, and place seam-side down in the dish.
  6. Top with remaining enchilada sauce and shredded cheese.
  7. Bake for 20 minutes or until the cheese is bubbly.
