Greek Lemon Rice

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a pot, heat olive oil over medium heat. Sauté the onion until translucent.
  2. Add garlic and sauté for another minute.
  3. Stir in the rice and cook for 2 minutes, coating it with the oil.
  4. Pour in vegetable broth and lemon juice, then add salt and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18-20 minutes or until rice is cooked.
  6. Remove from heat and let it sit covered for 5 minutes.
  7. Fluff the rice with a fork and stir in parsley before serving.

Notes

  • For added flavor, consider using chicken broth instead of vegetable broth.
