- 1 cup long-grain rice
- 2 cups vegetable broth
- 1 lemon, juiced
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- In a pot, heat olive oil over medium heat. Sauté the onion until translucent.
- Add garlic and sauté for another minute.
- Stir in the rice and cook for 2 minutes, coating it with the oil.
- Pour in vegetable broth and lemon juice, then add salt and pepper. Bring to a boil.
