  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and halved
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • salt to taste
  • pepper to taste

Instructions

  1. In a large bowl, combine the quinoa, grilled chicken, cherry tomatoes, cucumber, red onion, feta cheese, kalamata olives, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
