Gluten-Free Homemade Oatmeal Creme Pies ~ Unbelievably Good!

These gluten-free oatmeal creme pies are not only unbelievably good but also easy to make, perfect for a sweet treat.

Ingredients

  • 1 cup gluten-free rolled oats
  • 1/2 cup almond flour
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 cup powdered sugar
  • 1/4 cup marshmallow fluff

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the oats, almond flour, brown sugar, white sugar, and the softened butter until well combined.
  3. Add in the egg, vanilla extract, baking soda, salt, and cinnamon. Mix until smooth.
  4. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  5. Bake for 10-12 minutes or until the edges are golden brown.
  6. Let cool completely before filling.
  7. For the filling, mix powdered sugar and marshmallow fluff until creamy.
  8. Spread the filling onto the flat side of one cookie and top with another to make a sandwich.

Notes

  • For best results, let the oatmeal pies cool completely before adding the filling.
  • Adjust the sweetness by adding more or less sugar based on your preference.
