These delightful Gingerbread Snowballs are the perfect indulgent treat for the winter season, combining the flavors of gingerbread with a snowy sugar coating.

  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans
  • 1 cup granulated sugar, for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream together the butter and powdered sugar until light and fluffy.
  4. Add the vanilla extract and mix well.
  5. Gradually add the dry ingredients to the wet mixture and stir until combined.
  6. Fold in the chopped pecans.
  7. Form the mixture into small balls and place them on the prepared baking sheet.
  8. Bake for 10-12 minutes until the edges are golden.
  9. Allow the cookies to cool slightly, then roll them in granulated sugar while still warm.

Notes

  • For an extra ginger kick, add more ground ginger to the batter.
  • These cookies freeze well, so make a double batch and save some for later!
