  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices.
  4. Set up a breading station with flour, egg wash, and breadcrumbs.
  5. Dredge each slice in flour, dip in eggs, and coat with breadcrumbs.
  6. Heat olive oil in a pan and fry the breaded eggplant slices until golden brown.
