- 4 large russet potatoes
- 4 strips turkey bacon
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheese
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes, then bake for 45 minutes.
- In a large pot, cook the turkey bacon until crispy. Remove and crumble.
- Add onion and garlic to the pot, sauté until translucent.
- Dice the baked potatoes and add them to the pot.
- Add chicken broth and seasonings; bring to a boil and then reduce heat.
- Stir in milk and cheese until melted and creamy.
- Serve hot, topped with crumbled turkey bacon.
Notes
- Adjust the spice level by adding more or less cayenne pepper.
- For a thicker soup, use an immersion blender to blend some of the potatoes.
