  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 tablespoons olive oil
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1/2 cup heavy cream (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet.
  3. Add diced onion and minced garlic to the tomatoes.
  4. Drizzle with olive oil and season with salt, pepper, and sugar.
  5. Roast in the oven for 25-30 minutes until softened and caramelized.
  6. Transfer the roasted mixture to a blender and add vegetable broth and dried basil.
  7. Blend until smooth, then return to the pot and heat over medium.
  8. If desired, stir in heavy cream for a richer flavor.
