Ingredients

  • 2 cups mixed vegetables (carrots, cucumbers, bell peppers)
  • 1 cup water
  • 1 cup white vinegar
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 teaspoon mustard seeds
  • 1 teaspoon black peppercorns
  • 1 clove garlic, smashed

Instructions

  1. Prepare the vegetables by cutting them into bite-sized pieces.
  2. In a saucepan, combine water, vinegar, sugar, salt, mustard seeds, and black peppercorns. Bring to a boil.
  3. Once boiling, remove from heat and let it cool for a few minutes.
  4. Layer the vegetables in a clean jar and pour the vinegar mixture over them.
  5. Add the smashed garlic clove on top.
  6. Seal the jar and refrigerate for at least 24 hours before enjoying.
