Easy Pumpkin Soup from Canned Pumpkin

A quick and comforting pumpkin soup recipe made using canned pumpkin.

Ingredients

  • 1 can pumpkin puree
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Stir in pumpkin puree, vegetable broth, coconut milk, cinnamon, and nutmeg.
  4. Bring to a simmer and cook for 10 minutes.
  5. Season with salt and pepper.
  6. Blend the soup until smooth using an immersion blender.
  7. Serve warm, garnished with a sprinkle of cinnamon if desired.

Notes

  • For a spicier version, add cayenne pepper.
