  • 2 cups enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add cumin, garlic powder, onion powder, salt, and pepper to the beef and mix well.
  4. Warm tortillas in a microwave for 30 seconds to make them pliable.
  5. Spread a layer of enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with a portion of the beef mixture and cheese, then roll them up and place them seam side down in the baking dish.
  7. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  8. Bake for 20 minutes until heated through and cheese is bubbly.
