Easy Green Chicken Enchiladas

A simple yet flavorful recipe for green chicken enchiladas that adds a delicious twist to the traditional dish.

  • 2 cups shredded cooked chicken
  • 1 cup green enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup chopped onion
  • 1/2 cup sour cream
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat the olive oil and sauté the onion until translucent.
  3. Add the shredded chicken and half of the green enchilada sauce; mix well.
  4. Warm the corn tortillas to make them pliable.
  5. Spoon the chicken mixture onto each tortilla and roll them up.
  6. Place the rolled tortillas in a baking dish and pour the remaining enchilada sauce on top.
  7. Sprinkle shredded cheese over the top.
  8. Bake for 20-25 minutes or until cheese is melted and bubbly.
