- 2 pounds chuck roast
- 1 pound beef shank
- 4 dried guajillo chilies
- 2 dried ancho chilies
- 1 onion, chopped
- 4 garlic cloves
- 2 teaspoons cumin
- 1 teaspoon oregano
- 4 cups beef broth
- 12 corn tortillas
- 1 lime, cut into wedges
- 1 cup chopped cilantro
- Begin by toasting the dried chilies in a pan until fragrant, then soak them in hot water for 15 minutes.
- In a blender, combine the soaked chilies, garlic, onion, cumin, oregano, and a cup of beef broth. Blend until smooth.
