  • 1 pound beef shank
  • 4 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion, chopped
  • 4 garlic cloves
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 4 cups beef broth
  • 12 corn tortillas
  • 1 lime, cut into wedges
  • 1 cup chopped cilantro

Instructions

  1. Begin by toasting the dried chilies in a pan until fragrant, then soak them in hot water for 15 minutes.
  2. In a blender, combine the soaked chilies, garlic, onion, cumin, oregano, and a cup of beef broth. Blend until smooth.
  3. In a large pot, brown the meat on all sides, then pour in the blended sauce and remaining beef broth. Cover and simmer for 2-3 hours until tender.
  4. Once cooked, shred the meat and serve in warmed tortillas with cilantro and lime.
