Dhaba Style Egg Curry

  • 4 hard-boiled eggs
  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 1 tomato, pureed
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 cup water
  • salt to taste

Instructions

  1. Heat oil in a pan and add cumin seeds.
  2. Once they splutter, add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and fry for a minute.
  4. Stir in the pureed tomato and cook until the oil separates.
  5. Add turmeric, red chili powder, coriander powder, and salt; mix well.
  6. Add water and bring to a simmer.
  7. Carefully cut the hard-boiled eggs in half and gently place them in the gravy.
  8. Sprinkle garam masala and let it cook for another 5 minutes.
  9. Serve hot with rice or bread.

Notes

  • For extra flavor, you can add a pinch of kasuri methi (dried fenugreek leaves).
  • Adjust the spice levels according to your preference.
