  • 4 pieces chicken thighs
  • 1 cup diced tomatoes
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1 cup chickpeas
  • 1 cup chicken broth
  • 1/2 cup green olives
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add onions and garlic, sauté until translucent.
  4. Stir in the chicken thighs, spices, and cook until browned.
  5. Add tomatoes, chickpeas, olives, and broth; bring to a simmer.
  6. Transfer everything to a casserole dish and cover with aluminum foil.
  7. Bake in the oven for 45 minutes.
  8. Remove foil and bake for an additional 15 minutes.
