Crunchy Coffee Cake

A delightful coffee cake with a crunchy topping perfect for morning enjoyment.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup streusel topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in the sour cream and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Pour half of the batter into a greased 9×13 inch baking dish, then sprinkle with half of the streusel topping.
  8. Spread the remaining batter on top and finish with the remaining streusel.
  9. Bake for 35-40 minutes or until a toothpick comes out clean.
  10. Allow to cool before serving.

Notes

  • For added flavor, consider adding nuts to the streusel topping.
  • This cake pairs wonderfully with coffee or tea.
