Crockpot Mexican Chicken Soup

A delicious and hearty crockpot recipe that combines tender chicken with vibrant Mexican flavors for a comforting soup.

  • 1 pound chicken breasts
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the beans, corn, tomatoes, onion, and garlic on top of the chicken.
  3. Pour in the chicken broth and season with chili powder, cumin, salt, black pepper, and cayenne pepper.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. Once the chicken is cooked, shred it in the pot and stir to combine.
  6. Serve hot, garnished with cilantro if desired.
