Crockpot Creamy Tomato Tortellini Soup

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups vegetable broth
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 12 ounces cheese tortellini
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté onion until translucent, about 5 minutes.
  2. Add garlic and cook for another minute.
  3. Transfer onion and garlic to a crockpot.
  4. Add crushed tomatoes, vegetable broth, basil, and oregano. Stir to combine.
  5. Cook on low for 6 hours.
  6. Add tortellini and heavy cream. Cook for an additional 30 minutes on low.
  7. Stir in spinach and season with salt and pepper before serving.

Notes

  • For extra flavor, top with grated Parmesan cheese when serving.
  • This soup can be made ahead of time and reheated.
