Crockpot Chicken Noodle Soup

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 8 ounces egg noodles
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add chicken broth, carrots, celery, onion, garlic, thyme, and rosemary.
  3. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Add egg noodles and cook for an additional 30 minutes on high.
  6. Season with salt and pepper to taste before serving.

  • For a creamier soup, consider adding a splash of heavy cream right before serving.
