Crock Pot Stuffed Peppers

A delicious and easy family meal featuring stuffed peppers with turkey bacon.

  • 4 large bell peppers
  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup cooked rice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese

Instructions

  1. Prepare the bell peppers by cutting the tops off and removing the seeds.
  2. In a skillet, cook the turkey bacon until crispy, then chop.
  3. In a bowl, combine ground turkey, chopped bacon, cooked rice, garlic powder, onion powder, salt, and pepper.
  4. Stuff each bell pepper with the turkey mixture.
  5. Place the stuffed peppers in the crock pot and sprinkle cheese on top.
  6. Cook on low for 6-8 hours or until the peppers are tender.

Notes

  • For extra flavor, add chopped onions and tomatoes to the stuffing mixture.
