  • 1 pound shrimp, peeled and deveined
  • 4 strips turkey bacon, diced
  • 2 cups spinach
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, add olive oil and minced garlic, sauté until fragrant.
  3. Add the shrimp to the skillet and cook until pink.
  4. Stir in heavy cream, sun-dried tomatoes, and spinach. Cook until the spinach wilts.
  5. Add the Parmesan cheese, salt, and pepper. Mix well and let it simmer for a few minutes.
  6. Return the crispy turkey bacon to the skillet and combine.
  7. Serve hot over pasta or rice.
