Creamy Spinach Mushroom Lasagna

A delightful blend of creamy cheese, fresh spinach, and savory mushrooms layered between pasta make this lasagna a comforting dish perfect for any occasion.

  • 9 sheets lasagna noodles
  • 1 tablespoon olive oil
  • 2 cups mushrooms, sliced
  • 3 cups fresh spinach, chopped
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add mushrooms and garlic, sauté until mushrooms are softened.
  4. Add spinach, Italian seasoning, salt, and pepper. Cook until spinach is wilted.
  5. In a mixing bowl, combine ricotta cheese with half of the mozzarella and parmesan cheese.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Layer three lasagna noodles, half the ricotta mixture, half the spinach and mushroom mixture, and another layer of marinara sauce.
  8. Repeat the layers, finishing with noodles, remaining marinara sauce, and topping with the remaining mozzarella and parmesan.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbling.
  10. Let it cool for 10 minutes before slicing and serving.

Notes

  • This lasagna can be assembled ahead of time and stored in the refrigerator before baking.
  • Feel free to add other vegetables like zucchini or bell peppers for extra flavor.
