- 1 cup orzo pasta
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- In a large pot, cook the orzo according to package instructions. Drain and set aside.
- In the same pot, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp from pot and set aside.
- In the pot, add cherry tomatoes and cook until softened. Stir in heavy cream and chicken broth.
- Add paprika, salt, and pepper, then bring to a simmer.
- Return shrimp to the pot and stir until heated through.
- Add cooked orzo and mix until well combined.
- Garnish with fresh parsley before serving.
