Creamy Chicken Pasta Soup Recipe with Carrot and Spinach

  • 2 cups cooked chicken, shredded
  • 1 cup pasta, small shapes
  • 1 cup carrots, diced
  • 2 cups spinach, fresh
  • 4 cups chicken broth
  • 1 cup cream
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add garlic and sauté until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Add pasta and cook according to package instructions.
  5. Stir in shredded chicken, carrots, and cook until carrots are tender.
  6. Reduce heat and add cream and spinach, stirring until spinach wilts.
  7. Season with salt and pepper to taste. Serve hot.

Notes

  • For a thicker soup, add more cream.
  • Leftover turkey can be used instead of chicken.
