Creamy Butternut Squash Gnocchi with Sausage, Thyme, and Sage

Ingredients

  • 2 cups butternut squash, peeled and cubed
  • 1 package gnocchi
  • 1 tablespoon olive oil
  • 1 pound sausage, casings removed
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh sage, chopped
  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the butternut squash in a pot of boiling water until tender, about 10 minutes.
  2. In a large skillet, heat olive oil and cook the sausage until browned.
  3. Add thyme and sage to the skillet and cook for 1 minute.
  4. Stir in the cooked butternut squash and gnocchi.
  5. Pour in the heavy cream and simmer for 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve warm and enjoy!
