Ingredients

  • 2 cups all-purpose flour
  • 1 cup chopped walnuts
  • 1 cup dried cranberries
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/2 cup orange juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together flour, baking soda, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla and almond extract, then orange juice.
  6. Gradually add the flour mixture, mixing until just combined.
  7. Fold in walnuts and cranberries.
  8. Pour into a greased loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.
  9. Let cool before slicing.

Notes

  • For a sweeter bread, add more sugar.
  • You can substitute walnuts with pecans if desired.
