Comforting Loaded Baked Potato Soup for Cold Days

Ingredients

  • 4 large russet potatoes
  • 4 slices turkey bacon
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions

Instructions

  1. Cook the turkey bacon until crispy, then crumble and set aside.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add diced potatoes and chicken broth, bring to a boil, then simmer until the potatoes are tender.
  4. Blend the soup until smooth, then stir in the heavy cream, cheese, sour cream, salt, and pepper.
  5. Serve hot, topped with turkey bacon and green onions.

Notes

  • For added flavor, replace some chicken broth with a splash of white wine.
  • This soup can be made ahead and reheated.
