Colcannon Soup

Colcannon Soup is a creamy, comforting dish that combines the traditional flavors of colcannon with the richness of turkey bacon.

  • 4 cups chopped potatoes
  • 1 cup shredded cabbage
  • 1 cup diced turkey bacon
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add onion and garlic, sauté until translucent.
  2. Add turkey bacon and cook until crispy.
  3. Stir in chopped potatoes and chicken broth, bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Add shredded cabbage and simmer for an additional 5 minutes.
  5. Stir in heavy cream, season with salt and pepper, and heat through.
  6. Use an immersion blender to blend the soup to desired consistency.
  7. Serve hot, garnished with extra turkey bacon if desired.

Notes

  • This soup can be blended until smooth or left a bit chunky based on preference.
