Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine the brewed coffee, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly among the cupcake liners.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the cupcakes cool completely before frosting.
  8. To make the mocha buttercream, beat together softened butter, powdered sugar, cocoa powder, and a little brewed coffee until creamy.
  9. Frost the cooled cupcakes with the mocha buttercream.
