  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the bananas. Add crushed pineapple, melted butter, sugar, egg, and vanilla extract; mix until well combined.
  3. In another bowl, combine the dry ingredients: baking soda, salt, and flour.
  4. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  5. Fold in shredded coconut.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 60-70 minutes or until a toothpick comes out clean.
  8. Allow to cool before slicing and serving.
