Christmas Stuffed Pork Roast Recipe

A delicious and festive twist on the classic pork roast, perfect for holiday celebrations.

  • 3 pounds pork loin roast
  • 1 cup breadcrumbs
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté onion and garlic until translucent.
  3. In a bowl, mix breadcrumbs, cranberries, walnuts, thyme, salt, pepper, and sautéed mixture.
  4. Add beaten eggs to the mixture and combine well.
  5. Cut a pocket into the pork loin and stuff it with the filling.
  6. Season the outside of the pork with salt and pepper.
  7. Place in a roasting pan and bake for 1.5 hours or until the internal temperature reaches 145°F (63°C).
  8. Let rest for 10 minutes before slicing.

Notes

  • For extra flavor, marinate the pork roast overnight before cooking.
  • Serve with a side of mashed potatoes or roasted vegetables.
