- 3 pounds pork loin roast
- 1 cup breadcrumbs
- 1 onion, diced
- 2 cloves garlic, minced
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs, beaten
- Preheat the oven to 375°F (190°C).
- In a skillet, sauté onion and garlic until translucent.
- In a bowl, mix breadcrumbs, cranberries, walnuts, thyme, salt, pepper, and sautéed mixture.
- Add beaten eggs to the mixture and combine well.
- Cut a pocket into the pork loin and stuff it with the filling.
- Season the outside of the pork with salt and pepper.
- Place in a roasting pan and bake for 1.5 hours or until the internal temperature reaches 145°F (63°C).
- Let rest for 10 minutes before slicing.
