Chopped Kale Salad with Toasted Breadcrumbs

A refreshing and nutritious chopped kale salad topped with crunchy toasted breadcrumbs.

Ingredients

Scale
  • 1 bunch kale
  • 1 cup breadcrumbs
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Wash and chop the kale into bite-sized pieces.
  2. In a skillet, heat olive oil over medium heat and add breadcrumbs. Toast until golden brown.
  3. In a large bowl, combine chopped kale, cherry tomatoes, red onion, and feta cheese.
  4. Drizzle with lemon juice, and season with salt and pepper. Toss to combine.
  5. Top salad with toasted breadcrumbs just before serving.

Notes

  • For added protein, consider adding grilled chicken or chickpeas.
