- 1 can chickpeas, drained and rinsed
- 2 medium potatoes, peeled and diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- In a large pot, heat olive oil over medium heat.
- Add the chopped onions and minced garlic, cooking until the onions are translucent.
