Chickpea Potato Soup

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onions and minced garlic, cooking until the onions are translucent.
  3. Stir in the diced potatoes and cook for a few minutes.
  4. Add the chickpeas, vegetable broth, cumin, and paprika. Bring to a boil.
  5. Reduce heat and let simmer for 20 minutes or until potatoes are tender.
  6. Season with salt and black pepper to taste.
  7. Use an immersion blender to puree the soup to your desired consistency.
  8. Serve warm.
