Chicken Tortilla Soup Recipe

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup corn kernels, fresh or frozen
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 4 corn tortillas, cut into strips

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chicken and cook until browned, about 6-8 minutes.
  2. Remove the chicken from the pot and set aside. In the same pot, add the onions and garlic, sautéing until the onions are translucent.
  3. Add the diced tomatoes, chicken broth, black beans, cumin, chili powder, salt, and pepper. Bring to a boil.
  4. Once boiling, return the chicken to the pot, reduce heat, and let simmer for about 20 minutes.
  5. Stir in the corn, cilantro, and lime juice. Cook for an additional 5 minutes.
  6. Serve hot, topped with the tortilla strips.

Notes

  • For a spicier version, add diced jalapeños.
  • Garnish with avocado or cheese if desired.
