- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup corn kernels, fresh or frozen
- 1/4 cup fresh cilantro, chopped
- 2 limes, juiced
- 4 corn tortillas, cut into strips
- In a large pot, heat the olive oil over medium heat. Add the chicken and cook until browned, about 6-8 minutes.
- Remove the chicken from the pot and set aside. In the same pot, add the onions and garlic, sautéing until the onions are translucent.
- Add the diced tomatoes, chicken broth, black beans, cumin, chili powder, salt, and pepper. Bring to a boil.
- Once boiling, return the chicken to the pot, reduce heat, and let simmer for about 20 minutes.
- Stir in the corn, cilantro, and lime juice. Cook for an additional 5 minutes.
- Serve hot, topped with the tortilla strips.
Notes
- For a spicier version, add diced jalapeños.
- Garnish with avocado or cheese if desired.
