Chicken Piccata Pasta

A delightful pasta dish with a zesty lemon sauce, capers, and succulent chicken.

Ingredients

  • 8 ounces spaghetti
  • 1 pound boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 2 tablespoons capers
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the spaghetti according to package directions. Drain and set aside.
  2. Season chicken with salt and pepper, then dredge in flour.
  3. In a skillet, heat olive oil over medium-high heat. Add chicken and cook until browned, about 4-5 minutes per side. Remove from skillet.
  4. Add lemon juice, chicken broth, and capers to the skillet, scraping up any brown bits.
  5. Return chicken to the skillet and simmer for 5 minutes until cooked through.
  6. Combine spaghetti with sauce and chicken, tossing to coat. Garnish with parsley before serving.
