Chicken Enchilada Soup

A delicious and comforting chicken enchilada soup that is easy to make and perfect for any occasion.

Ingredients

  • 2 cups shredded chicken
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 can enchilada sauce
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup shredded cheese for topping
  • 1 handful cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until softened.
  2. Add the shredded chicken, black beans, corn, diced tomatoes, enchilada sauce, chicken broth, cumin, and chili powder. Stir to combine.
  3. Bring the soup to a boil, then reduce the heat and simmer for 20-30 minutes.
  4. Serve hot, topped with shredded cheese and cilantro.

Notes

  • For added heat, include jalapeños.
  • This soup can be made in a slow cooker as well.
