- 2 cups shredded chicken
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 can enchilada sauce
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 cup shredded cheese for topping
- 1 handful cilantro for garnish
- In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until softened.
- Add the shredded chicken, black beans, corn, diced tomatoes, enchilada sauce, chicken broth, cumin, and chili powder. Stir to combine.
- Bring the soup to a boil, then reduce the heat and simmer for 20-30 minutes.
- Serve hot, topped with shredded cheese and cilantro.
Notes
- For added heat, include jalapeños.
- This soup can be made in a slow cooker as well.
