  • 1 can corn (15 oz)
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup shredded cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sautéing until softened.
  2. Stir in the chicken breasts, chili powder, cumin, and paprika, cooking until chicken is browned.
  3. Add diced tomatoes, black beans, corn, and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Shred the chicken and return it to the pot. Stir in cheese until melted.
  5. Top with fresh cilantro before serving.
