- 2 pounds potatoes, peeled and cubed
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup turkey bacon, cooked and crumbled
- 1 can cream of chicken soup
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cornflakes, crushed (for topping)
- Preheat the oven to 350°F (175°C).
- In a large pot, boil potatoes until tender, then drain.
- In a large bowl, combine sour cream, cheddar cheese, turkey bacon, cream of chicken soup, green onions, garlic powder, onion powder, salt, and pepper.
- Add the drained potatoes to the mixture and stir until well combined.
- Transfer the potato mixture to a greased baking dish.
- Top with crushed cornflakes.
- Bake for 30-35 minutes or until heated through and golden brown on top.
Notes
- For a vegetarian option, omit turkey bacon.
