Cheesy Potatoes (Funeral Potatoes)

Delicious and creamy Cheesy Potatoes, often referred to as Funeral Potatoes, enhanced with turkey bacon for an extra layer of flavor.

  • 2 pounds potatoes, peeled and cubed
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 can cream of chicken soup
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cornflakes, crushed (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, boil potatoes until tender, then drain.
  3. In a large bowl, combine sour cream, cheddar cheese, turkey bacon, cream of chicken soup, green onions, garlic powder, onion powder, salt, and pepper.
  4. Add the drained potatoes to the mixture and stir until well combined.
  5. Transfer the potato mixture to a greased baking dish.
  6. Top with crushed cornflakes.
  7. Bake for 30-35 minutes or until heated through and golden brown on top.

Notes

  • For a vegetarian option, omit turkey bacon.
  • Can be prepared a day in advance and baked just before serving.
