Cheesy Mississippi Mud Potatoes

A delicious twist on comfort food featuring cheesy mashed potatoes topped with crispy turkey bacon.

  • 2 pounds potatoes
  • 1 cup cheddar cheese, shredded
  • 1/2 cup milk
  • 4 ounces cream cheese
  • 4 slices turkey bacon
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons green onions, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and chop the potatoes, then boil them until tender.
  3. Drain the potatoes and mash them with milk, cream cheese, garlic powder, salt, and pepper until smooth.
  4. Stir in the cheddar cheese and half of the green onions.
  5. Spread the mixture into a greased baking dish.
  6. Cook the turkey bacon until crispy, crumble it, and sprinkle it over the top.
  7. Bake in the preheated oven for 20 minutes until heated through.
  8. Garnish with remaining green onions before serving.

Notes

  • For a spicier version, add diced jalapeños to the potato mixture.
  • Feel free to substitute regular bacon for turkey bacon if preferred.
