1 tablespoon olive oil
1 pound Italian sausage
1 onion, diced
3 cloves garlic, minced
1 head cauliflower, chopped
4 cups vegetable broth
2 cups kale, chopped
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
In a large pot, heat the olive oil over medium heat.
Add the Italian sausage and cook until browned.
Stir in the onion and garlic, cooking until the onion is translucent.
Add the chopped cauliflower, vegetable broth, thyme, salt, and pepper. Bring to a boil.
Reduce heat and let simmer for 20 minutes, or until cauliflower is tender.
Stir in the kale and cook for an additional 5 minutes.
