Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the grated carrots, sugar, and brown sugar.
  3. Add flour, butter, eggs, and vanilla, and mix until smooth.
  4. In a separate bowl, combine baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Blend the dry ingredients into the carrot mixture until just combined.
  6. Pour the batter into a greased springform pan.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
